According to recent studies, groundnut skins have an abundant amount of natural antioxidants and a high content of dietary fiber.

1. It is rich in antioxidant

Groundnut skins are rich in phenolic compounds, which go to say that they are antioxidant rich. Antioxidants, on the hand, help p protect the body from oxidative stress, which occurs in cases of various cancers and diseases.
They are powerful substances, which prohibit (and in some cases even prevent), the oxidation of other molecules in the body.
According to a 2012 study from North Carolina University, published in the "Journal of Food Science," it was reported that adding a 5 percent concentration of peanut (groundnut) skins to peanut butter significantly increased its antioxidant levels without sacrificing taste or texture.


2. Heart-healthy fats

As earlier stated, groundnut contains monounsaturated and polyunsaturated fats that keep the heart healthy.
And this is great for the great for the healthy condition of the heart because a good level, of both monounsaturated and polyunsaturated fats, help to lower blood cholesterol levels as well as reducing the risk of coronary heart diseases.

3. It is a high source protein

When it comes to the healthiness of our cells, protein is essential. And this is because the cells in our body are constantly being replaced and repaired and to ensure that the new cells are healthy, and the damaged ones repaired well, the need for protein cannot be overemphasized.

How To Roast Groundnut In A Fry Pan

Today we learn how to roast groundnut in a fry pan without using sand.
Here are three simple methods of making Nigerian roasted groundnut/fried groundnut. Roast groundnuts are a great snack any day, for roast groundnut lovers, one week doesn’t go by without cravings for this delicious, nutritious snack.
They taste really great if done the proper way and well salted. Here in Nigeria, There are three methods of roasting or frying groundnut also known as peanuts. There  may be other methods out there but here in Nigeria, these three methods are what groundnut sellers use. 
METHODS:
1. With Sand
2. Without sand (Using garri)
3. With table salt.
There is a third method that’s not widely used because most people do not like very salted groundnuts… Roasting with salt instead of sand or garri.

When I open a bottle of roasted peanuts to enjoy, from the first bite, I know what method was used because the difference is very obvious.
Most groundnut sellers use the low cost method to maximize profits thereby helping buyers grow appendicitis. Some use sand because they are not aware of other methods.
Whether you fry/roast groundnuts with one method or the other, the process of getting the final product to be crunchy is the same.
The level of crunch depends on your washing procedure just before making them.
The process is the same until after drying.
When you are done drying, then comes the decision to use the best method for roasting peanuts or use the cheap method that leaves buyers/ party goers with sore teeth.

First, Let’s look at the Procedure for making peanuts, and for those who like to coat or make peanut burgers, you first of all have to let them pass through this process if you want crunchy groundnuts. Unless of course you are buying already roasted peanuts in which case you start coating and frying.
Simple Procedure for making Crunchy Groundnuts
1.   Pick out stones from your fresh groundnuts, soak in hot (Boiling water) for a few minutes or till the water colour changes and the groundnuts look pale (Lighter). 
Salt and spread out on a tray or mat to dry in the sun, oven or your preferred drying method. Dry until the wetness disappears.Roast in a pot or fry pan using your favourite method (Methods explained below)

6.   To make roast groundnuts the Nigerian way, you need to put something in the cooking pot or frying pan used, under the peanuts to prevent them burning.
7.   That’s  if you really care about your health and teeth, and do not want to chew stones, do not use sand. If you do not want to be too cautious while chewing Nigerian roast groundnuts, do not use sand.
8.   Use a little quantity of garri instead.
1.  After drying the washed and salted groundnuts in the sun as explained above, place a fry pan on the stove.
Let it heat up a little before you sprinkle some garri on it. Then pour in your groundnuts and with a spatula or wooden spoon, start stirring.  After about five minutes, get checking by removing some skin and chewing to see if it’s brown and done.
I like mine roasted very brown almost to the point of burning, so I let it roast longer until I’m satisfied with the colour.
Note that roast groundnut doesn’t get crunchy while still hot! you take it off the stove, with a colander or sieve, remove all the groundnuts from the garri and set aside to cool n a large serving tray. Once they start cooling, they start getting crunchy. 
 Store in airtight containers to retain the crunch.
